Strange happenings with my body since eating at Red Lobster.

So, a few days ago I posted that sometimes I go out to chain restaurants and eat badly for research of what happens to your body when you eat that junk.

Well, my mom got my boyfriend and I a gift card to Red Lobster a couple of months ago, so we just decided to go and have a free meal. Why not, right?

I had never been to Red Lobster before the other night, so I wasn’t sure how good (or not good) the food was. People I had asked were giving me mixed reviews.

Well, I might as well have dumped a bucket of salt into my mouth because that’s all I tasted. Disgusting. Alas, the meal was free so I decided to suck it up and just eat it.

Ever since eating there, aside from the obvious bloating, I’ve had a consistent stomach ache and I just noticed today that I have a pinkish “chapped” looking ring around my mouth. It doesn’t hurt, but it looks ugly. Could I be having a delayed reaction from the food I ate? I read that an increase in sodium intake can do that to your mouth. Weird. I’ve been drinking A LOT of water and slapping on the Chapstick every couple of hours or so and it doesn’t seem to be going away.

I highly suspect it was the food I ate and this is my body’s way of telling me, “DON’T EVER DO THAT AGAIN!”

What gives? Help!

Garbanzo bean patties

My recipe needs a little tweaking because they crumbled on me, but here’s what I used:

• One 25oz can of garbanzo beans (or chickpeas, whatever you call them)
• 1 egg white
• 1 TSP of sriracha
• 1 TBSP of panko bread crumbs
• Salt, pepper and garlic powder to taste.

Here’s how I prepared them:

• Drain and rinse garbanzo beans
• Put all ingredients in food processor and blend away. (I pulse because I like them with a little texture)
• Mold into patties and transfer them to a non-stick pan.
• Cook until brown on each side and warm in the middle.

I call it research.

Occasionally, I do go out to chain restaurants and eat badly to just see how bloated I am the next day from all the sodium.

I do this so I can tell my clients to not eat that food and what happens to your body when you do.

What better way to tell people to stop eating badly than to experience it yourself?

Is that weird? I think I’m just being realistic so I can relate to clients on a deeper level.

Early dinner.

I have to go workout in two hours, so I decided to eat a little something beforehand so I don’t pass out. (Which is a common worry of mine)

So I put together this little bowl of wonderful:
Quinoa
Broccoli
Veggie burger
Sriracha (of course)

That’s it! Now I’ll have enough energy for my afternoon workout! I hope you try this little bowl of deliciousness yourself! Yum!

Vegetarianism

This past week, I decided to adopt a vegetarian lifestyle. I had been a vegetarian a few years ago, but since I didn’t know how to eat correctly, I actually ended up gaining weight by compensating the meat with more carbs. (The bad kind)

I look back at that time and cringe at what I used to eat. Now, since I’m more educated on food and nutrition I know how to balance everything.

I decided to try vegetarianism again because I was eating a chicken breast the other day, and it was really grossing me out thinking that I was eating the flesh of a dead animal. Poor chicken.

My journey begins again.

Stormy day in California.

I’m pretty sure this is the only “weather” we’re gonna get here on the west coast for the rest of the year, but I digress.

Since it is a chilly 63 degrees right now and I was finally able to dust off my fuzzy pajama pants (east coast, I don’t know how you deal with your freezing temperatures) I decided to make a healthier version of my favorite comfort food!

Ta-da!! Quinoa “mac” and cheese with spinach!

Just follow the package instructions on how to cook the quinoa. Usually it’s two cups water to one cup quinoa. (Make sure you rinse prior to cooking!) Let cook for 15-20 mins.

After it’s cooked, stir in shredded cheese of your choice and spinach. Add some water to the pot if it starts getting too dry.

Transfer to baking dish and bake at 350 for 40 mins. Add some panko bread crumbs to the top for some crunch.

Voila! Enjoy!
