Early dinner.

I have to go workout in two hours, so I decided to eat a little something beforehand so I don’t pass out. (Which is a common worry of mine)

So I put together this little bowl of wonderful:
Quinoa
Broccoli
Veggie burger
Sriracha (of course)

That’s it! Now I’ll have enough energy for my afternoon workout! I hope you try this little bowl of deliciousness yourself! Yum!

Stormy day in California.

I’m pretty sure this is the only “weather” we’re gonna get here on the west coast for the rest of the year, but I digress.

Since it is a chilly 63 degrees right now and I was finally able to dust off my fuzzy pajama pants (east coast, I don’t know how you deal with your freezing temperatures) I decided to make a healthier version of my favorite comfort food!

Ta-da!! Quinoa “mac” and cheese with spinach!

Just follow the package instructions on how to cook the quinoa. Usually it’s two cups water to one cup quinoa. (Make sure you rinse prior to cooking!) Let cook for 15-20 mins.

After it’s cooked, stir in shredded cheese of your choice and spinach. Add some water to the pot if it starts getting too dry.

Transfer to baking dish and bake at 350 for 40 mins. Add some panko bread crumbs to the top for some crunch.

Voila! Enjoy!
